Edible Wild Plants and Their Uses, Including Herb Gathering and Herb Cooking in the Garden Kitchen
It’s amazing what edible treasures can be found in the forest and in the meadows. These wild plants were once used to meet our daily vegetable needs, but unfortunately, along with their valuable nutrients, they have fallen into obscurity. My goal is to spark your interest in the herbs found in your local area. Wild herbs are available almost year-round, and we can use them to create a healthy and varied diet.
During our wild herb walk through meadows and gardens, we’ll get to know the individual plants by their flower color, leaf structure, and their distinctive taste and scent. We’ll discuss how to avoid mistaking one plant for another, tips for foraging, and how to prepare them. We’ll supplement the herbs we’ve gathered with those from my garden. Together, on the grounds of the herb farm, we’ll prepare delicious wild herb dishes over an open fire and using the old kitchen stove. For example, we’ll have wild herb salad, nettle patties, wild herb gnocchi with sage butter, nettle potato soup, tomato-lovage salsa, and herbal drinks. Afterward, we’ll all sit down together for a big meal in the garden. Enjoy the adventure of gathering, preparing, and tasting these wild herbs.
