Where guests arrive with their horses, are greeted like old friends and are handed a cooking spoon without further ado: Welcome to Gutshaus Ehmkendorf in the heart of Mecklenburg-Vorpommern.

It's 10.00 pm. The wine glasses clink and the juice drips as chef René slices the last fillets from the oranges in front of his guests. A unanimous „Ooohh“ accompanies the meter-high flame that quickly turns the juicy vitamin dispensers into a culinary inferno. „René just knows how’to do it“, says hostess Levke proudly.

At Gutshaus Ehmkendorf, Levke is not just a host, but also a friend, companion and even a bit of a guest herself. Together with her husband Kai, the Hamburg native bought the Ehmkendorf manor house a few years ago in the Recknitz Valley bird park region, a small but beautiful area just a 30-minute drive from the Hanseatic city of Rostock and the Baltic coast of Mecklenburg-Vorpommern. Not only to give Hugo the rooster, Quebracho the horse and their son Kai Frederik a little piece of the real world, but above all to live their dream. Of freedom, of a life in step with nature and a vacation offer that is wild in the truest sense of the word and makes it clear to every guest as soon as they arrive: "Feel like a guest with friends". Speaking of arrival:

First to the yoga class in the fireplace room

„Have we found a little trigger here? Then we should hold the position like this while we're here.

Yoga teacher Nadin, former owner of the manor house and now operator of a small yoga studio in Tessin near Rostock, leaves no doubt that she knows how to lure Levke's guests out of their shells. Especially regular guest Kati, who regularly travels to the Ehmkendorf manor house in Mecklenburg-Western Pomerania for weekend breaks and leaves the stress of the city and the cold days of winter behind her during yoga sessions in front of the fireplace.

The program includes yoga poses, warrior poses and spiral-dynamic exercises, in which sports scientist Nadin takes well-known hatha yoga to the next level with humour and knowledge. Sometimes in one-to-one sessions like Kati's, sometimes in multi-day yoga retreats that relieve physical tension, ground the mind or detoxify the body. Sometimes also during a yoga retreat, which brings horse and rider into balance under the motto „Ride, eat & repeat“.

With the horse whisperer

Vacation for two- and four-legged friends

„Quebracho and Pavana are real powerhouses. Carved from really hard wood, but sometimes also very impulsive“, says Levke with a controlling look at her sturdy Criollo ponies. A breed that she got to know and love during a stay of several months in Chile. „By the way, that also applies to me. Maybe that's why we fit together so well.“ Good is the key word. Levke knows what is good. For her horses, who are offered a real grazing experience in a spacious grass and forest paddock, as well as for her guests, who experience feelings of happiness on wonderful rides through the gently rolling Recknitz valley and on instructive courses.

„You can't learn flying canter changes with me, but you can learn a better understanding of the four-legged friends in order to be able to communicate with them on the same level and become a perfect team.“ She gets help from yoga teacher Nadin, who is also a horse rider and knows: „The problems of the horse are often linked to the problems of the rider.“ The harmony that prevails today between Levke's cloven-hoofed Pavana and new friend Kati must be discovered during a one-day ride through the fields and meadows behind the manor house.

Shopping in the open air

Foraging for wild herbs with Levke in the manor house park

Just before Kati, together with other guests, seeks the luck of the earth under the Mecklenburg winter sun, the lady of the manor, Levke, quickly grabs a key. She picks anything that gets in her way on the way to the herb garden. „And anything that is edible.“

On this day, the plants include wild garlic, ribwort plantain and daisies, only a few of which can still be seen in the tall grass after the cold days of winter. So it already seems clear what will be on the table in the evening. At least next to the leg of venison that Levke's husband shot himself a few days earlier in the Recknitz Valley forest.

Ten logs for one roast

Delicacies from the fire kitchen

In the meantime, house and court chef René has also arrived. With a loud thud, he places his cobbler's bag, which contains a colorful collection of cooking utensils, on the cast-iron August Speiser stove. A colossus, five meters long and two meters wide, it was forged in Rostock more than a hundred years ago and has already changed hands several times. „There are only three of these left“, Levke interjects as she hands over her green garden delicacies to René üand then drums her fingers into the kitchen with the loud echoing call „Kooochen“

.

Quail eggs, onions, muesli, bacon and, of course, the green prey from the manor house garden. Sometimes halved, sometimes sliced, sometimes diced. While the ingredients for the hearty roast venison with jacket potatoes and brown gravy are being added to the pots, Kati's daughter Matilda ensures a regular supply of wood in the glowing fire compartment of the stove. Over delicious wine and wonderful food, they tell anecdotes, talk shop and listen to Levke's exciting manor house stories. What an atmosphere!

Then it's 10.00 pm. The Kaiserschmarrn is already waiting impatiently to be crowned as the manor house chef rinses the last orange fillets and marinates them in a high-proof marinade. All it takes is a spark from the hearth fire to ignite the explosive mixture, light up the eyes of the guests and enchant their palates. „René, he just knows how to do it.“
